Is an essay regarding recipes and precision and the liberation of discovering that a recipe is just an armature supporting improvisation in the kitchen.Full disclosure, I found a pointer to this over on Hacker News. I wish I'd read it at the same time I read La Technique, which I think was in 1982. But I slowly blundered my way there over the next twenty years and am much happier for it. Now I want to learn to make challah.
