1 Introduction

For long-term space-flight human explorations and for colonization of planets or satellites a constant and self-sustaining food supply is needed. Insects are already present in regular diets for billions of people and represent a sustainable food source (Omuse et al., 2024). The nutritional value of insects is extremely high. Indeed, they are an excellent source of complete protein, essential fatty acids, iron, zinc and B vitamins, all essential for growth and development of humans, with values often comparable to or higher than those of meat, fish and legumes (FAO, 2013; EFSA, 2015; Zhou et al., 2022).
