I’ve been making crepes, lately, for myself and for others and I have to admit that I’m a fan. They’re stupidly prepare for and easy to make, leave almost no mess in terms of cleaning and impress anyone you’re serving them to.
My current go-to crepe recipe is the Serious Eats "Basic Crepe Batter Recipe" but I modify it slightly by replacing some of the all-purpose flour with cornstarch (as I found recommended in RecipeTinEats’ mango pancakes recipe).

I’ve been making crepes, lately, for myself and for others and I have to admit that I’m a fan. They’re stupidly prepare for and easy to make, leave almost no mess in terms of cleaning and impress anyone you’re serving them to.
My current go-to crepe recipe is the Serious Eats "Basic Crepe Batter Recipe" but I modify it slightly by replacing some of the all-purpose flour with cornstarch (as I found recommended in RecipeTinEats’ mango pancakes recipe).
With the batter prepared, I cook up the crepes on my 26cm Solidteknics AUS-ION pan. I make sure to preheat it for a few minutes and spread a small amount of butter with my spatula before pouring a small ladle full of the batter. (Following this properly ensures that you don’t have a sacrificial crepe that’s unevenly cooked.) Immediately, I, swirl it around using the pan handle (pandle?) until the whole bottom is covered. After a while, I flip it over and wait for the rest to cook.
I really like sweet crepes so that’s what I go for most of the time. My top picks for fillings are strawberries and cream and mango and cream.
