Currently enrolled in the MBA program at the David Nazarian College of Business and Economics, Beltran recently founded Lucky Bites, a mobile catering cart offering customizable food experiences for private events. From charcuterie cups and acai bowls to desserts and interactive catering setups, the business reflects both her creative background and the strategic skills she is developing through her coursework.
