For nearly 30 years, the Bellagio dining room overlooking the fountains was home to Picasso, which helped define fine dining on the Las Vegas Strip. Though Picasso closed in 2024, the space now belongs to Carbone Riviera, bringing chef Mario Carbone’s polished approach to a seafood-forward menu.
