I was able to try some Sejak quite a while ago and found it really nice. It was relatively at the beginning of my quality tea journey so I have no notes and details on it and have brewed it western style only. I have been trying to find it again ever since but to no success.
So today I found another Korean tea in a local teashop. It is a Joongjak. There was a chance it was not that fresh probably (local shops are terrible) but I decided to get some. I tried it immediately in my gaiwan: 5g, 100ml, 70oC, flash rinse, 10s first infusion, then +10s for each subsequent one up to a minute, and then two last infusions for 2min and 3min (8 infusions in total). It was absolutely delicious! Even though it is a green tea, it does not have any grass taste and no astringency. Taste is very like roasted nuts. Hopefully, I will be able to find Sejak again to compare. Or perhaps some of the other grades of Korean green tea. For sure they are nothing like Japanese or Chinese ones.
P.S.: The four grades of Korean green tea are: 1. Ujeon, early April harvest, first pluck, buds only; 2. Sejak, April-May harvest, second pluck, one bud and one leaf; Joongjak, late May harvest, third pluck, young leaves; Daejak, late June harvest, fourth pluck, mature leaves.
