Lori's Recipe Journal on Instagram: "PINEAPPLE JALAPEÑO PICKLES
INGREDIENTS
2 cups fresh pineapple, cut into chunks
1 cup sliced jalapeños (seeds in = spicier)
1 cup cucumber slices (optional)
1 cup white vinegar
3/4 cup sugar
1 tbsp salt
2 cloves garlic, smashed
1 tbsp fresh ginger, minced
1/2 tsp black peppercorns
1/2 tsp mustard seeds
1/2 tsp red chili flakes
INSTRUCTIONS (short + clean)
1. Pack pineapple, jalapeños, and cucumbers into a jar.
2. Heat vinegar, sugar, salt, garlic, ginger, and spices until dissolved.
3. Pour hot brine over ingredients.
4. Cool, seal, and refrigerate at least 24 hours.
